Cook 2 packages of rotini al dente, then rinse under cold water. Core and remove seeds from 2 medium tomatoes, and dice into 1/2 inch pieces. Peel 2 cucumbers, and dice into 1/2 inch pieces. Finely chop 2 small yellow onions. Chop 3 tablespoons of fresh oregano, and 3 tablespoons of fresh parsley. Combine all ingredients in a large mixing bowl, and add 3 tablespoons of red wine vinegar, 1/2 a cup of olive oil. Salt and pepper to taste, and toss well. Serve chilled. Serves 8-12.
